Creamy Gnocchi with Spinach Feta this …

Ingredients:

  • 1 pound potato gnocchi
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup fresh spinach, chopped
  • 1 cup heavy cream
  • 1 cup feta cheese, crumbled
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Preparing the Gnocchi

  1. Start by bringing a large pot of salted water to a boil. This will be used to cook the gnocchi.
  2. Once the water is boiling, add the potato gnocchi. Cook according to the package instructions, usually about 2-3 minutes or until they float to the surface.
  3. Once the gnocchi are cooked, use a slotted spoon to remove them from the pot and transfer them to a plate. Set aside.

Making the Creamy Sauce

  1. In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1 minute, or until fragrant. Be careful not to burn the garlic.
  2. Add the chopped spinach to the skillet and cook for about 2-3 minutes, stirring frequently, until the spinach is wilted.
  3. Pour in the heavy cream and stir to combine with the garlic and spinach. Allow the mixture to simmer for about 5 minutes, stirring occasionally.
  4. Next, add the crumbled feta cheese and grated Parmesan cheese to the skillet. Stir until the cheeses are melted and the sauce is creamy. If the sauce is too thick, you can add a splash of pasta water to reach your desired consistency.
  5. Season the sauce with dried oregano, salt, and pepper to taste. Stir well to combine all the flavors.

Combining Gnocchi and Sauce

  1. Once the sauce is ready, gently add the cooked gnocchi to the skillet. Use a spatula to carefully fold the gnocchi into the sauce, ensuring they are well coated.
  2. Cook for an additional 2-3 minutes over low heat, allowing the gnocchi to absorb some of the sauce and heat through.

Serving the Dish

  1. Once everything is heated through, remove the skillet from the heat. If desired, garnish with fresh basil leaves for an added touch of flavor and color.
  2. Serve the creamy gnocchi immediately while hot. You can also sprinkle some extra Parmesan cheese on top for an extra cheesy finish.

Tips for Perfect Gnocchi

  • For a richer flavor, consider browning the gnocchi in a bit of butter after boiling them. This adds a nice texture and depth to the dish.
  • If you prefer a lighter version, you can substitute the heavy cream with half-and-half or a plant-based cream alternative.
  • Feel free to add other vegetables like sun-dried tomatoes or mushrooms to the sauce for added flavor and nutrition.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of cream or water to loosen the sauce.

Variations to Try

  • Protein Boost: Add cooked chicken, shrimp, or sausage to the dish for a heartier meal.
  • Herb Infusion: Experiment with different herbs like thyme or rosemary for a unique flavor profile.
  • Spicy Kick: Add a pinch of red pepper flakes to the sauce for a bit of heat.

Final Thoughts

This creamy gnocchi with spinach and feta is not only delicious but also quick to prepare, making it a perfect weeknight dinner option. The combination of creamy sauce, tender gnocchi, and the tangy flavor of feta creates a comforting dish that everyone will love. Enjoy your cooking adventure!
